Cookies!

Hi! My name is Shayla and I am addicted to sugar. I know I'm not the only that struggles with this and I have decided I can overcome it! Solution...healthy alternatives. Sort of. I'm starting slow and hoping to become good a substituting. We'll see how it goes. 
Here is my first attempt....peanut butter cookies. I have been craving cookies-more specifically cookie dough-a lot this week. A co-worker of  mine told me of a clean chocolate chip recipe she tried so I decided to try my hand at creating a somewhat "clean" cookie recipe. I'm not 100% sure of what it takes for a recipe to be clean but hopefully this counts.

1 c. peanut butter
1 egg
2 Tbsp. butter
1/2 c. honey
1 1/4 c. oat flour
1/4 tsp. salt
3/4 tsp. baking soda
1/2 tsp. baking powder

Preheat the oven to 350 degrees. Mix peanut butter, egg, butter and honey until smooth. Add remaining remaining ingredients and mix until well blended. Scoop onto a cookie sheet and bake for 8-10 minutes. Makes about 32 cookies.

**for the oat flour I just used my magic bullet and old fashioned oats...worked great! 


Lincoln was my little taste tester and he enjoyed them...so they must be good! I had a few too...they are actually quite filling too!

Appreciation Day...just because

I don't know about anyone else but some times I get so wrapped up in everything I have to do and chasing a toddler around that Chris gets left behind...so sorry Chris. This whole balancing act is not easy...and I only have one kid...what's it like with more? That is an overwhelming thought! 
But, today we decided to change it up. I put work on hold and had Lincoln help a little bit to give Chris his own appreciation day. It was a fun project and the only thing we had to purchase was the juice! I love projects like that!!! :) We even made a "Welcome Home" sign and set his little gifts by the garage door to greet him as he came in. Things like this need to happen more! It makes all the difference in the world when you feel loved and appreciated. :)

Cookin'

This little monster LOVES to help cook. I'm pretty sure he spends more time in the kitchen than anywhere were else. If he isn't up with all the action while we are making breakfast or dinner he is not a happy camper. So, he helps :) This could turn in to a very good thing for me later on! Let's keep on cookin' my little junior master chef!
